You know those conversations where the sentences start,"I remember when......". We were talking the other day and my husband and I both remember going home from school and making a batch of Honeycomb. Not really the ideal afternoon snack but so good!!!!! I decided to have an all day baking day today seeing as I will have a house full over Easter. Flicking through a recipe book I found Honeycomb and I couldn't resist making him a batch.
Honeycomb
1 cup sugar
1 cup Golden syrup
1 tablespoon white vinegar
1 tablespoon bicarbonate of soda
Place sugar, golden syrup and vinegar in a large saucepan (a really big one or it will be a MESS at the frothing stage!!) and stir over a medium heat until the sugar dissolves. Continue cooking, without stirring, until a little of the mixture, dropped in cold water separates into hard brittle threads that snap easily. Remove from heat and stir in the bicarbonate soda. The mixture will immediately bubble up. pour into a shallow greased tin at least 9 inches 23cm square (I found this size was a bit small) and place tin on a wire rack to cool. When quite cold break into pieces. Store in layers in a tin with a tight fitting lid with sheets of foil between each of the layers.
It tasted exactly as I remembered.

Oh Jackie! That is disgusting! I can't believe you put that up! Now I will have to go and make some...and I don't even plan on a house full of visitors! Shame! Shame on you!
Yum - I have a weakness for honeycomb (usually covered in chocolate..oops did I confess that?). Actually I've always said I wanted to try to make my own, now I'll have to since you've made it sound so easy!
